This classic roast beef recipe can be made using rump roast, round roast, or roast sirloin. Slow roasting over a low heat magically works the toughest cuts of meat and provides a recipe for tender beef that you’ll love!
1 tsp. Freshly ground black pepper
2 tsp. kosher salt
1 (4 pounds) round roast
1/4 c. Extra virgin olive oil
3 cloves garlic, minced
1 tbsp. chopped fresh rosemary
1 tbsp. chopped fresh thyme leaves
Leave the roast uncovered at room temperature for 1 to 2 hours.
Preheat the oven to 450 degrees. In bowl, mix oil, garlic, rosemary, thyme, salt, & pepper. Rub all over the roast.
Place roast in a skillet fitted with a roasting rack. Roast for 15 minutes, then reduce heat to 325 degrees and roast for an additional 1 hour and 45 minutes for medium cooking, or 2 hours for medium-quality cooking.
Removing from oven also let rest 15 to 30 min before serve .
