Hope we can all agree that the best fried chicken is tender on the inside, teeth crunchy on the outside and full of flavor all around.  I’ve filled out this post with everything you need to know about getting fried chicken to perfection, so let’s start right from the start.

 

What piece of chicken to use for fried chicken ?

 

I always get a whole chicken and cut it, just because I like the variety. This post is going to be really long the way it is so I’m not going to add a tutorial on how to do this, but if you don’t know how to slice a whole chicken for fried chicken, check out this video. From this, you will get 10-12 chicken pieces (depending on whether you split the wing in two or not, here I do).

 

Best chicken to use for deep frying ?

 

If you choose not to use a whole chicken, just use a variety of different cuts – half thighs and half thighs. Just be sure to use the bones in the skin on the chicken. This results in fried chicken that’s crunchier / juicier. I love drumsticks because they are the easiest to eat, but thighs and wings are also classic options. If you are also making the breast, just make sure to cut it in half (save the bone) or else it will be too big to cook properly.

 

 

* Ingredients

 

° 3.3 lbs / 1.5 kg whole chicken split (or individual bones in the skin on chunks – see notes)

° 3-4 cups / 750ml – 1 liter vegetable oil, or as needed for deep frying (see notes)

Wet Mix

° 2 cups / 500 ml of yogurt

° 1 teaspoon each: paprika, cayenne pepper, white pepper, onion powder, garlic powder, salt

Dry mixed

° 2.5 cups / 375g all-purpose flour

° 1 tablespoon paprika

° 2 teaspoons each: oregano, baking powder

° 1.5 teaspoons salt, plus an extra amount to sprinkle at the end

° 1 teaspoon each: onion powder, garlic powder, cayenne pepper

° 1/2 teaspoon black pepper
