LEMON BROWNIES

Ingredients:

3 eggs

1¼ cups of flour

1¼ cups of sugar

1 lemon (zest and juice)

70 milliliters of whipping cream

100 grams of powdered sugar

60 grams of butter

50 milliliters lemon juice

1½ dessertspoonfuls of baking powder

Preparations:

Preheat the oven to 170 ºC. Grease a rectangular mold with a bit of butter and put parchment paper. Put a bowl with the sugar and butter at room temperature. Mix with a whisk.

Once the butter and sugar are mixed, add the eggs one by one and mix well to integrate them.

Once the eggs are integrated, add the juice of one lemon and the zest. Mix.

Add the cream and mix again.

Sift the flour with a teaspoon of yeast and, with the help of a whisk, add them little by little until they are integrated into the dough.

Do not turn on the stove until at last 20 minutes have passed. Open to check how it is going and prick with a toothpick in the center of the lemon brownie. If it comes out dry, you will know it is ready, and if not, put it back in and check every so often until it is prepared. When ready, take it out and cool it on a wire rack.

Prepare the lemon glaze for the brownie. Place the sugar in a bowl and gradually add the lemon juice. Stir until it becomes a thick cream. If more is needed, repeat the operation.

Cover the brownie with the glaze. Let the glaze dry for a while, and it’s ready. Cut the lemon brownie into cubes and serve.
