Cucumber & tomato salad is as simply as summer in bowl. The sauce is light and delicious from the vinegar, the cucumber and onion are so crunchy that you can’t stop eating them, and the tomatoes are so juicy and sweet that they explode in your mouth. 3 medium (peeled and cut into 1/4-inch-thick slices)
° onion (slice and cutting to rings)
° Tomatoes: 3 medium (cut into wedges)
° Vinegar: 1/2 cup
° Sugar 1/4 c: up
° Water: 1 cup
° Salt: two teaspoons
° Coarsely ground black pepper: 1 teaspoon
° Oil: 1/4 cup
° Fresh mint: 1 tsp (chop) “optional”
* How making pickled cucumber, onion & tomato:
