°6 Yukon Gold potatoes
°3 tablespoons of butter
°2 tsp bacon bits
°1/2 cup grated cheddar cheese
°2 tablespoons green onions
°2 tablespoons melted butter
Scrub the potatoes and cut them in half. Adding them to pot of water to covering potatoes & bring to a boil. Boil for 20 minutes or until fork tender.
Drain the potatoes and mash them plain with butter. Add delicious ingredients like cooked bacon, cheese, green onions and anything else you might like and have in your kitchen.
Pour into a greased muffin tin, run a fork over the top and brush with melted butter or olive oil. Bake at 375°F for about 15 minutes or until top is crispy and golden.
Tip: If your tops aren’t browning as expected, try broiling them for a few minutes or until golden brown.
