3 Beef cube steaks
2 Tbsp. Olive oil
8 oz. Sliced mushrooms
1 Small onion sliced
½ tsp. Cajun seasoning
Salt and pepper to taste
¼ C. + 2 Tbsp. All purpose flour divided
2 C. Chicken broth
Season the cube steak on both sides with the cajun seasoning as well as salt and pepper to taste.
Dredge the cube steak completely with flour on both sides.
Heat the olive oil in a skillet over medium high heat on the stove.
Add the steak to the heated skillet and sear on both sides evenly, cooking until your desired doneness has been reached. Set aside on a plate.
Add the onions and mushrooms to the skillet and saute until softened.
Sprinkle 2 Tbsp flour over the vegetables and stir to combine well.
Lower the temperature to medium heat, and add the chicken broth to the skillet. Whisk to combine well.
Continue to saute until the sauce has thickened.
Add the meat back to the skillet, toss to coat in the sauce and serve.
