Super Moist Boiled Christmas Fruit Cake image 2

This delicious boiled fruit cake is the easiest recipe ever and it never fails! Everyone loves how moist it is and it’s all thrown together in one saucepan then baked. I make up my own dried fruit as I don’t like the peel in pre-mixed fruit.
500 g mixed dried fruit
125 g butter
1 1/2 cups water
1 cup brown sugar
1 tsp bicarbonate of soda
1 tsp allspice
2 eggs beaten
1 cup self-raising flour
1 cup plain flour
3 tbs sherry *optional
1/2 cup almonds
Place the first 5 ingredients into a large saucepan and boil for 5 minutes. Cool mixture.
Add eggs, flour, nuts, spices and sherry. Mix well.
How to make self-raising flour.
Bake in a springform tin lined with baking paper and cook in a 170C oven for 70 – 90 minutes. Cool cake in the tin before removing and storing in an airtight container.
I like to add a pinch of extra cinnamon and ginger to the allspice mix. I mostly use
